The owner of the bakery is Baker Monika Walker, a talented dynamo who originated from Germany (a place where bread is taken very, very seriously!). She is a tireless supporter of local food producers and purveyors, which is evident when you look at her abundant stock of local cheeses, sauces, dressings, vinegars, honeys, and fresh pastas. But the best examples of her pride in locally-sourced ingredients can be found in her delicious breads. Monika features a seasonally-inspired bread every week. Monika supplies many restaurants with her breads – so you may have tried her loaves at Waterfront Restaurant, RauDZ Regional Table, or Cabana Grille. Another neat thing about Monika: she uses a 100-year-old sourdough starter in her breads which she has named Arnold – a starter passed down to her from a baker-mentor in a sort of baker to baker sisterhood.
